180 Gallon and FX-5

I'll be honest...I have a Fx5 on my 120g and I'm not impressed on how "clean" my tank looks. I expected more since I do 50% water changes every week. My media consist of Eheim Substrat Pro in the top tray, Fluval Biomax in the second tray, and then Ammonia Remover and Carbon in the last tray.

wow.... i have exact same thing as u, filter, tank, and media setup minus the ammonia remover crap.... but i have the opposite results lol... well i do have an eheim 2028 pro 2 along side it...;)

- these are what u should choose to put in ur FX 5... it already has lots of massive sponges so the mech side is covered!

Don't know your setup, and I'm a goldfish person so it might be different, but from reading the above, especially:
I expected more since I do 50% water changes every week.

Perhaps that's the problem there. 50% is a lot to do weekly. My guess is you're not allowing enough chance for good bacteria to develop and establish. I'd suggest dropping to 25%. And of course depending on your setup, maybe 25% every 2 weeks.
 
Get rid of the ammonia remover. You don't need it. That will screw up your BB colony
