I'm working on setting up a 210 gallon aquarium 96"Lx24"Wx21"H the plan so far for the stock list is
1 red spotted severum 1 ntt datnoid 1 ebjd 1 harlequin lancer catfish 1 ornate bichir and 1 or 2 more bichirs I'm also looking in to bolt catfish.
I'm interested in buettikoferi, delhezi, teugelsi, Koliba lapradei and endlicheri although I'm not sure if the tank is big enough for lap and endli. I'd like to hear people's experiences with these bichirs and what their personalities are like along with any suggestions.

It’s plenty big. Your tank is bigger than mine (6x2x26). U can throw in an additional cornucopia dozen of bichirs. No Probz. Here’s an older photo and semi current video of mine.

I plan to run a fx6 canister filter on the tank and not a sump but I do have a 40 gallon sump tank that could be used. My main reason for not running a sump is that I don't have any experience with sumps
Sumps are easy, get a spare tank/tub, split it into compartments by using glass/plastic and siliconing them in place. Once you have the compartments you can put in sponges, biomedia, a heater, a sponge filter, a canister filter, etc. into there.

I have a 40 gallon sump tank and two pumps that came with the tank but I don't know anything when it comes to doing the plumbing for a sump. I've been doing some reading on how to do the plumbing for the setup though.

No need to split it into compartments. The 40 breeder a pump, filter socks, and bio is all you need.

We can help with the plumbing aspect. Did you purchase the tank already ? If so and it isnt drilled you can do a hob oveeflow and sump but if it were me i would just go with hob filters or canisters. Those hob over flows can cause floods.

You can also drill your own holes if the glass isnt tempered
