If anything I'll move the Cons to their own tank and maybe try rainbowfish for dithers. Are Sevs a bad/better option over Cons/Rainbowfish?

No problem A sev would be one of the main fish in the tank, and wouldn't function as a dither like the cons/rainbows. You could put the cons in their own tank if you like and use rainbowfish for dithers. If you get more than one severum, I would aim for 2 females since males tend not to get along, and I doubt you want to deal with a pair of 12 inch breeding fish in the middle of all that

Finally made my final upgrade to 225 and need help with stocking ideas. It is 72"L and 30"W.

Trying to avoid the usual stuff at chain stores, will have my common pleco Bob and Oscars, but will probably go with a wild Oscar.
Clown loaches are also a good possibility, have a smaller grow out tank for them until they hit 5-6".

Was thinking maybe 2 O's, but can't imagine this will work long term unless I get super lucky buying 4 and get 2 females. Pair would be nice but dont want them to claim the tank for themselves if they breed.

A friend gave me 10 juvi Midas that are bred from a pair of F1 he bought from Jeff Rapps.
Have mixed reviews if they'll work or not, currently at 2-3". Parents look great, but dont want to be stuck with 300+ fry in a year like he is now, was hoping on keeping 1 male or 2 females.
if you go midas, the best option is grow out 10, pick your nicest biggest bull male and have 1 midas 10 silver dollar tank
With an Oscar tank should I just try for a pair and stock around that? yes
What are some good mates for O pairs? silver dollars, bala sharks, sun cats

Not in a rush so oddball fish would be fine, just want to keep it priced reasonably.
Dont care for silver dollars or dither fish.
Found some nice red severums that are an option. great option for a big community tank
Marble cons or ghost/pink cons. maybe with some firemouths and an oscar as a showpiece

A nice looking Dempsey would be good, haven't found any locally. Good looking ones aren't common for me. arent found locally for many
Clown loaches or similar fish that grows faster with personality. sun catfish

Choc and Parrots seem non-existent, gonna have to keep an eye out for them.

What would work best with:
1 - Oscar
1 - Common Pleco
2 - Female Cons
1 - Sev Heros cf. efasciatus ‘rotkeil’
-----------?

1 - Costa Rican Nic - Hypsophrys nicaraguense
1 - Pearlscale Cichlid - Herichthys carpintis
? - Thorichthys pasiones - Close to firemouth
Also various Acaras available.
3 - Krobia sp. ‘Xingu orange’ - max out at 5-6" but very nice looking.
1 - Thread fin Acara - bigger fish, gets to 8" or so
1- Colombian acara - also gets to 8" or so

Eyeballing Jeff Rapps current stock. Shipping is going to limit me to 1 or 2 deliveries.
Also ordering a bottle of Dr. Tims to be on the safe side with the bio-load increase, making it hopefully a one stocking shipment. Forgot how quickly this stuff adds up.
