Tastes a lot like pork that was just fried with a batch of Catfish :) . Gator gar is really quite mild and has good texture and flavor. The back meat is the best for Frying, grilling or smoking. Tail meat is best ground up or chopped up and made into "gar cakes" (Similiar to Crab cakes) or adding to a "Garritto" :P ....

Lepisosteus such as Spotted and Shortnosed is a little different in texture and taste but still quite good and very much palatable. Same rule applies Back meat is best Tail a bit stronger. The smaller lepisosteus are better prepared by grilling whole and then separating the meat after it is cooked, you can then add this to whatever.

Longnosed is a bit weird but very good when very fresh.

It is a total lie that these fish can not be utilized as a food fish.

Now back to the regularly scheduled post of a Big fish in a tiny inappropriate tank...

agree that we both wanted to know the age of the fish. cuz its torture to put a fish of that size and still growing. but we all know that.

please someone get that beast a pond, pool, or something suitable. or take somewhere where they are native and release it. why torture it.
