Again 1 will be a minimum I would add 1-2 more depending on the bio load. You may be able to get away with one and add more fish as your filtration can accomodate

I think those stock tanks can sit right on the ground, maybe put a sheet of styrofoam under it. Your going to need to come up with a cover. Look into a hot tub type of cover. Those are 2" thick styrofoam covers or your going to have heating and evaporation issues.

Cool room and warm water. Every wall and all the windows are going to be wet and the stock tank will be dry lol
