I disagree with that statement. A dwarf gourami isn't capable of eating a cardinal tetra unless you are talking about a full grown 3.5 inch gourami with a half inch cardinal. Which you aren't going to find that small anyway. Cardinals get up to 2 inches so a little larger than a neon. That must have been one large betta and some tiny neons. I would say that is the exception rather than the rule.
You are absolutely right. It was just a fluke for me. I figured it’s worth mentioning just because there is potential for it, despite being so unlikely.
 
Do you guys think it would be okay if I have 1 (M) Opaline Gourami and 5 Turquoise Dwarf Goirami’s if they’re put in while they’re all young?
 
No, the opaline especially the males can be very aggressive and get too big.
 
I would go with a pair of opalines. Very few people actually breed them at home anymore. I think most would be shocked to see how many fry they churn out. They are really fun to watch and get beautiful as they age. They are also much hardier than the dwarf variants. Yes they get a little bossy especially as they spawn, but tall plants in a 36" tank will give everything space to work it out. Another option would be pearl leeri, but that is outside of what you asked and preferred colors.

I was just going to post about the Pearl Gourami. Think they get lost in the shuffle when people are considering gouramis. Dont get as big as Opaline and more peaceful.
 
I wanted a hint of blue somewhere in the selection of fish to contrast the red in the tank for my brother, so I was hoping to get the Opaline Gourami or Turquoise Dwarf Gourami somewhere in there- would a single Pearl Gourami get along with 5 of that variant Dwarf? If not I’m probably going with the Turquoise Dwarf Gourami’s and Cardinal Tetra’s (making a final decision today as I’m getting the smaller of whatever decision of pairs I make, today).
 
I wouldn't keep a single Pearl. Would either be too timid without more of its own kind or a male could be aggressive towards the Dwarf. Probably just one type of gourami makes sense in that aquarium.
