I set up a new 75gal tank. Plan was 2 angelfish. Got them a few days ago, love them, want to change the plan and get more. I dont want to cram 5 or more in there. Is either 3 or 4 a bad idea?
Thier will be a school of dither fish in with them.

(Assuming all 4 have a close to average/base-line angelfish temperament. I'm aware specific individuals can be extra agressive or timid)

You have a 50/50 chance of currently having either two males or two females. You also have a 50% chance of having a pair that may breed.

If you add one or two more that dynamic changes rapidly and behavior in the tank will change dramatically assuming water parameters are good enough for breeding to occur.

The concept of dither fish in these settings is an elusive one for me but the short version is; go ahead and do it. It's not like you're going to get an angel that's also the Highlander and if everything goes completely wrong you can always take the punkiest one or two back to your LFS. You won't lose much.

Does 3 have a better chance of working out than 4?

My experience with other semi-aggressive fish is dwarf cichlids and gourami. With all of them a 3ft tank was enough space for #3 to stay out of the breeding pairs territory or if they're all the same gender and one of them is a jerk the agression is distributed enough to not cause concern.
Does the logic work with 3 angelfish in a 4ft tank?

Not really... and angels are not all about constant fighting either. They're cranky and will chase other fish off in the right circumstances but you'll be fine and if you're not just take the excess back to your LFS and you'll have lost five or ten bucks. There is no down side to this minimal risk.
