I have a bamboo and a Zebra eel together and no issues at all. Zeebra eels are not the same "toothy" eels as other morays. They're teeth are more for shelled fish like snails, and such. My zebra never messes with anyone. THey are a very non aggressive eel and keep to themselv's only coming out to eat. He eats the same things i give the bamboo's. Shrimp, squid, clam's, and fish pieces.. I would definatly without a dought stay away from Triggers. They are very nippy and will not hesitate to nip at your sharks fins. 400+ gal would work for most bamboo species just dont over crowd because they do make a mess. I would not trade up my sharks and eel for anything they are incredable and are a joy and love to watch. But definatly go as big as you can afford with tank, filtration, and protien skimmer. Dont skimp on them if anything. Good luck and keep us posted.
