I would have more than one male. Maybe 2M - 3-4F. Yellow labs or mbuna in general are pretty easy to breed so just choose a species you like and you will have fry in no time.

if you're looking for profits. breed shrimp in all 10 gallons. Breed HRP or red jewels in the 55.
