This fish looks more like mollies than guppies...would using a Dalmatian or white molly work better?

No its actually a gambusia or mosquito fish and its more closely related to a guppy than a molly
Silver dollars can be super skittish, they solidly hit the glass on the other end of the 6’ tank just becuase i am passing by.
No, it was just an observation. Not like you did anything wrong or what not. lol Do you have a want for angels or gouramis? (I know two Canadians that breed both. But we dont know what the dwarf gouramis will look like b/c one might be a hybrid)
