Good job finding new homes for those guys. You definitely had a disaster waiting to happen in your 55 gallon. I'd go with a large school of Giant Danio or Silver Dollar. If you wanted more color you could always do like a Tiger Barb school, or Buenos Aires Tetras. I think Giant Danio look neat with the blueish color strip down the center and look even cooler when they get bigger. Silver Dollars aren't much for color but also look really neat.
