I've never had one jump out of the tank, but they will certainly choose jumping or spitting as the situation requires to get food.

IDK about archers but always use a good, tight-fitting cover on your puffer tanks. I've lost 2 F8s to carpet surfing, because I forgot to close their lid after feeding.
