7.5 Gallon Stocking..

Hows this sound:

5 white cloud mountain minnows
2 Gold Honey Gouramis
1 betta
1 corydora
 
Corydoras are schooling fish, and unless you went with Pygmy Corydoras, 7.5 gallons is too small IMO for a decent sized group.

How about 3 female bettas?

Like I said earlier, I'm setting the tank up for my moms boss, and she said she didn't want any more bettas, as she already has one male, and she finds them boring..
 
Then keep the male betta, add 3-5 small fish (some tetras, some rasboras, white clouds perhaps), and some ghost shrimp. And maybe a snail. If the betta leaves the ghost shrimp alone, you could get some more colorful cherry shrimp instead.
 
Bettas and gouramis are a big no-no. They'll kill each other very quickly. If the betta is definitely going in there you'll be very limited, depending on the temperament. I had a betta that tried to kill my otos every chance he got. Luckily he never succeeded. Shrimp might work with a betta. Tylomelania snails would be a big hit. They large, weird, and beautiful. The betta may try to nip their antennae.

I'll definatelt ask if the betta will be going in or not..
 
Also, I know Brown Apple Snails destroy plants, but what about Golden Apple Snails?
 
Avoid apple snails, they can be a headache in aquascaped aquariums. Go for mystery snails instead.
 
I have had a 5g with Endlers, and aspidoras species I don't remember off hand (maybe poecilis) with plants. C. pygmaeus would work though. Don't think tetras are great idea. they either get too big or prefer more room to swim around in large groups. Aspidoras create action and the endlers for color.
