I admit i have only tried rams once, and while i found them attractive, they were rather boring.

Did you have blue/gold rams or bolivian rams? The bolivians get larger and are very different behaviorally. I always have kept bolivians in groups.

Would cories and red head tapajos get along ok since they both occupy the same area?

They should be fine as long as the cories are big enough not to be eaten.

The blue acaras I've kept would absolutely destroy bolivian rams and keyholes and just about any other dwarf cichlid. Not something I would try, especially in such a small footprint. Without the blue acara, a group of bolivian rams would be an excellent choice.
