The number of total fish depends on what species you choose. Obviously if you choose mbuna, haps, and peacocks that get to be 6"+, then you can't have as many compared to if you chose species that topped out more around 4".

But with mbuna, it is better to "overstock." In a 75g, I would agree to 30-35 is a good number to shoot for for now, but you possibly could have more - or top out with a bit less depending on filtration, water change schedule, and the particular fish you choose.
 
I would shoot for more like 25-30. 30-35 seems a bit much even when overcrowding. With 30-35 full grown fish ranging from 4-6" you will have bioload problems. You may have to do 2X a week water changes.
