Option 2 is going to be a PIA. Leaf fish are hard to get on pellets usually. Rope fish are escape artists so you have to seal up your tank top. Most people use duct tape.
The elephant nose isn't a beginner type fish. They get bullied really easily, feeding them enough will be a pain, and they're also specialized feeders with small items like insect larvae etc. I've used straws with bloodwork etc to get them food.
Have you thought about a group of quality firemouths with a supporting cast as an option?
If you got the dough. A schoutedeni puffer(s) with a supporting cast would be great for a planted tank. It will give you an interactive oddball fish to replace the elephant nose.
I'd love to do a puffer, but I'm not willing to do a snail tank or dentistry.
I am leaning towards doing an Amazonian stream style thing with plants on each side, and dritwood with angels, tetras and some small apisto/ rams type cichlids to fill it out
