Firemouths are the meanest of the three, they are generally peaceful compared to other cichlids, but have the largest potential for aggression.
Acaras are in the middle, they are mild mannered, only really mean when breeding.
I’ve never heard of aggression from rainbow cichlids besides the occasional fin nips.

I would suggest a severum, rainbow pair, and acara. You could probably put some sort of catfish and a school of dithers as well.

I love the look of the red-spotted severum, so that is an easy choice for me for the larger fish. How many of the medium sized peaceful cichlids could I get to house with it? I like firemouth, but they definitely don't have the colors that some others do. I'm kind of looking at acaras, rainbows, and firemouths in the same light in terms of size and temperament. Is that accurate to do, or am I misinformed? How many could I look to house with the severum in a 75g? Could anything else be added as well, or would they max it out?
I recommend the Blood Red Parrots, larger Tetras, and Electric Blue Acaras. You could house maybe a few Larger Tetras and 1 or 2 Blue Acaras. I would only recommend one Blood Parrot because if there is another it will mostly be bullied by whoever is the biggest, or dominates the other first. Make sure to have a clean-up crew as well.

As for size, firemouths are 5-7 inches, acaras are 6-8 inches, and rainbows are about 3-5 inches full grown.
