I wish there was something like this around here. It's in Mexico, in a place called Pitillal on the outskirts of Puerto Vallarta. It's called Asadedro el Orejon and it is really, really good.
My family is cuban and uses a cement pit very similar to that with a rack to lay a full pig on for Christmas Eve. It cooks on there for about 12 hours, slow cooked, and is really tender when ready
That's a creative method for lighting the chimney starter. When I'm in a hurry I usually light it as directed and blast the top coals with a torch, cuts heating time by 2/3.
I bet that's some delicious pork....Reminds me of a Hawaiian technique where a pig is buried in a pit in the groun.It is wrapped in banana leaves and layed over hot coals to roast overnight.

No, this place is on the North end of PV inland from the airport. I am pretty sure that you are talking about Chico's Paradise (check out Google images to see) which is near Mismaloya. My uncle's condo that we stay at is actually in Mismaloya, we've been to Chico's a couple times.
