So this wouldn't work either

1 green severum
1 firemouth
1 convict cichlid
6 giant danios
1 striped raphael catfish
1 sailfin pleco (2 years)
1 pimelodus ornatus or blochii (or possibly something like...a hoplo pair or a single AUSD)

I think you are currently overstocked. Do you test your nitrates ? That will let you know if you are overstocked. I usually change 50% of my water when nitrates hit 20 ppm some change at 40 ppm. How often your tank needs a waterchange tells you if you are overstocked. I don't want to change my tank more than once a week so I keep my tank lightly stocked (75 gallon with a 5" chocolate cichlid, 3" spotted raphael, and a 2" texas x bp hybrid) the hybrid will be rehomed as the fish get older.
Convict and firemouth can crossbreed also and if that happens they will try to claim the tank! I have been told kissing gouramis can take over a tank if they get picked on by cichlids pinning them into the corners of the tank.

This is just my opinion my .02!

Forget the gourami then. I'll try to do the same gender for the convict and firemouth.

Convicts are easy to sex without venting. Females have a little orange on their bellies once they are about 2"+.

Firemouths are a little trickier. Generally speaking, the males have more color and it's more vibrant. I would choose your firemouth first and either get the dullest one in the tank or the most colorful one, then choose a convict based on your firemouth gender choice. My method is no guarantee of accurate sexing, but it is usually fairly accurate.

Who ever it was that asked about the" hump" on angle fish.

This guy has been in my tank for about five or six months. I bought him when was about a dime in size. The last fee weeks the hump has started growing, kind of quick as well.

Angels get big, IME they are very social. Anytime me or the girlfriend walk by the tank, every one comes out and are at the front of the tank. Then your options for other fish is also widened.

Also on a side note. I would skip on the rainbow shark completely.
