Just curious, since Im kind of a newbie... what is the dark spot in the middle of fishes head and smaller spots ?

its a sign that the fish gives you when you need to lean your tank when its dirty parrot fish get the same thing at times for the same reason

Well I guess your right in a way. It is a possibility. Fish can change color a little depending on stress.

That's one nice fish though. Has more red to it than my Super Red Texas.
