About to use Himalayan Rock Salt (Pink) on my Koi tank, need advices.

IMO most Himalayan salt is no different than salt sold as Sea salt. Both primarily consist of Sodium chloride (approx. 98%), although some labels only list sodium. The remaining 2% consists of trace minerals. The Nature Quest brand appears to be marketed for human consumption, so unless the package that you bought is specifically for bathing, and includes added fragrances etc, it will be fine for your fish.

Not sure if it's edible but it only said "Soaking vegetables in rock salt solution is recommended to draw out possible insects. Adding rock salt in the bath can help draws out toxins and top remineralise the body, soothe aches, as well as to soften the skin."
 
If you can soak vegetables in it, it seems logical to me that it has been deemed safe for human consumption. In other words, it's no different than any other bulk kosher salt.
