I agree with the liquid tests being a more accurate type test.
Since you are on a well, testing the water directly from the tap, besides the water in the tank is a good idea.
It is possible that your well water is soft, and has low alkalinity, especially if the water comes from an aquifer of mainly granite or other non-reactive rock.
Low alkalinity (low buffering capacity) can make tank water drop in pH very quickly.
If so, many water changes per week may be needed if you have hard water species that are dying.
Because you are on a well, are you using a water softener that replaces the calcium ion with sodium (salt).
If that is the case, using water from an un-softened tap my help, if your water comes from a lime stone aquifer.
