i've never seen my bichirs do a death roll before. Do they need to be in a large group in order for them to display that kind of behaviour?

Not really. When the food is much larger they may or may not do the death roll. Ropefish and some upper jaw species does the deathrolls often when feeding. Larger lower jaw species rarely does it.
