Once siphon is started, you don't usually need to keep water running, so wasting water isn't necessary, as long as the sink is low enough.
For mine, I usually have a bucket of sand that needs rinsing under the drain line (where I also monitor temp), so water is always being used for something.
Mine started with a Python, but along the way I modified it so I could add water to 3 banks of (20) tanks at once.
