am i over stocked?

You guys talking about high nitrates - have you ever considered that nitrates can be present in tap water? At least in the UK anyway. Not sure on the exact amount, but certainly a lot of hard water areas have nitrates naturally present in tap water, so when you do the water changes you are in effect putting some back. But fish thrive and are healthy in this sort of water, so it isn't a huge concern. As someone else said it's not as if they're keeping softy discus.

You're right, some tap water already has nitrates in it. Here in the US I think it's illegal for tap water to contain more than 10ppm though, so it wouldn't be enough to mess with your tank. My tap water has none but it does have 0.25ppm or so ammonia, which Prime takes care of right away.
