When I go striper fishing we normally get two dozen eel and never put them in water. In just a wet rag I've had them survive for over 48 hours.

Make sure your lid is tight fitting. They will get out through the smallest hole. Your mummichogs may end up as food.
As a side note, the American eel may be listed as endangered by the USFWS. Decision was supposed to be made by the end of September, but I haven't heard anything yet.
