Old Tank syndrome. This happens alot to established tank that are not well maintained and lack of water changes. In your case this could be a result of changing your water with only the RO/DI. The bacteria need for breakng down ammonia cannot thrive in low pH, good news is ammonia is less toxic in low pH.
Ammonia is out of control....PLEASE HELP

Just a shot in the dark, what if I was to move my fish to another tank, and then recycle my tank.....start over ?
