Any idea what these guys are doing?

A UV wouldn't do anything if it's internal...it has to pass though the UV to kill. I wouldn't do anything as drastic as a UV.

Do they have hiding places?

Oh, I just bought the UV.

There is a cave, an EBGK tube, a bunch of plastic plants, and some driftwood. it is a bit sparse. Here's a pic. The flash really makes everything look dirty.

i would just watch them and give them some time. I have a few 2" inchers that acted that way there first week, one is still shy. Just watch for signs of aggression, harrasment, or ich.

You said that they don't have the "infamous white stringy poo". So far from what you have said, your EBJDs don't currently have any internal parasites. The UVS will help protect them from getting any. You said that they were scratching, which can indicate "External Parasites". The UVS will definitely help with that. I don't like to medicate when there may not be an infection.

try maracyn or potassium permanganate...

I would avoid potassium permanganate like the plague with EBJD's. It's a chemical oxidizing agent that will react with any organic matter, much to harsh for EBJD's.

I'd simply try adding some more hiding spots personally, maybe lessen the lighting.

I'm going to be taking the Jurupari out until I figure out what the problem is. I'm raising the temp to 84, adding 1tbsp salt/10gallons and also adding some more hiding places.

Can anyone recommend some better companions for the EBJDs? I know they will eventually get very big, but at the moment my 55 looks empty, especially with the EBJDs hiding. Would something like an angelfish be a good companion? Or an electric black ghost? I'm mainly removing the Jurupari because i think they are outcompeting for food.
