Seeing Sikes Creek Fl makes me think Mayaheros uropthalmus.
They have populated most waters from Sarasota south, and can be found in in fresh, brackish, and pure sea water.
This shot is from a brackish canal near the highway just west of Everglades City.

When mature they show dark bands, but when young those bands can be non-existent, there are also Tilapia in the pic, one in the upper left hand corner.
And in a tank with white sand, they tend to lose color, instinctively and unconsciously trying to blend in.
