The first thing I'd do is raise the heat to about 86F to bump his metabolism and see if it gets him eating. Sometimes when discus spit food and refuse to eat, they need to be treated with metronidazole for intestinal flagellates. For now, try the increased heat and see if it gets you anywhere.

It would probably be easier to do this in a smaller quarantine tank.

color is still great. Fins are still "perky" so to speak (no clamped fins). When he decides to come out into the open he swims nice and smooth.

It isn't like he is afraid of me either... he just refuses to come out into the open. The two sides of the tank have driftwood while the middle is open. HE gladly hangs behind the driftwood right next to the computer where I am sitting most of hte tim and ignores me.

I don't have a smaller tank to set up a Q...

my jack is exactly the same he lets fish alot smaller then him push him around, ive had several words with him telling him to grow some balls, but he's not having any of it! :)

like everyone has said maybe your sev needs some friends to make it come out of its shell
 
My blue acara had always been shy... she's about 4" TL now, and honestly i found only 2 ways to get her out of her cave area and roam the tank.
1) i bought a Geo abalios/altifrons (not sure on species yet) at petsmart, and she ended up following the baby geo around a bit. i didnt get the geo to make her chase it, things just turned out that way. she doesnt nip or harass it, just follows it once in a while.
2) feeding. she will come to the top of the tank for food and loves her pellets! oddly, she didnt venture to the upper levels of the tank during feeding until i got the geo and she followed it to the water surface, where the food was. she used to pick food off the bottom.

so, maybe get a companion?
edit- sorry, didnt see the post above me. looks like i have the same idea as others...
 
I dunno . . . I have a pair of port cichlids that never come out . . . they have a corner lair where they have spawned a couple times, and I'd say they spend 90% of their time in that area . . . at least 90% of the time when I am around to observe them

there are dithers in the tank, and no threats, so not sure what's the problem . . . I am going to try a tank re-arrange tonite, see if that helps . . .
 
I got my male sev at 1" around this time last year, he is about 6.5" now and the largest fish in the tank by far, but he is still shy around people, if i am across the room he will come out and act completely normal, foraging for food, chasing the female, picking at the driftwood, etc. but if i come closer to the tank he darkens up and swims for cover almost instantly. the weird bit is that he knows that i am the one with food and will even be for food if i sit next to the tank long enough, but as soon as i move he goes right back into hiding.
