I am just wanting to know how to adjust the pro settings regarding ISO, speed, EV etc. My assumption is WB will have to be adjusted to your tanks spectrum of light to match what your seeing; however, I am a total rookie when it comes to picture taking. I am just trying to get the basics down before I go out and buy a high end DSLR or something on impulse. If there is a sticky regarding this my apaologies. Any pointers when using a phone camera?

As a photographer, I’m happy to lend some advice/tips on settings. Keep in mind, even the nicest smartphones have limitations on what you’re able to do. That said, I’ve provided some info below.
1) If you’re able to shoot in RAW/NEF, I’d suggest doing so. This will give you way more flexibility in post.
2) Try to set a higher shutter speed if you’re able to. Most smartphones have apps that allow you to manually increase (or decrease) your shutter speed.
3) Don’t worry about/focus on ISO or exposure, seeing as that these are typically settings that are integrated into the phone’s camera software. Again, you can adjust your exposure, highlights, shadows, etc. in post.
If you’re able to invest in Adobe Lightroom, I’d recommend it as a first-line software. Well worth the monthly cost if you really want to dive into photography/editing.

Also to eliminate excess shadow try multiple light sources. You can get especially rich effects using a combination of led and incandescent. If you have mulltiple tanks in the room cover them with towels to reduce backlight and unwanted reflections while taking pics.

If you want deep shadow or 'a dropped out' dark background you can shift your lighting to the front of the tank. If you want to show background detail shift lighting to the back.
