I was hoping just to keep one fish in the 55. Does that change my options?
The Cichlids I listed were just some that are common at my local pet store.
What about a Salvini?
 
Having just 1 fish, all your choices including salvini could work, although the Oscar is pushing it, because it gets 14".
I believe a salvini is a great choice, lots of color, and stays small enough.
As any of the fish get to adult size, you will need to keep up frequent water changes, no matter what filtration you use.
Just resist the temptation to get more fish, if you keep a salvini a while, it will kill any newcomers.
 
If you can get your LFS to get a rotkeil severum in, it would be fine as the solo fish of the tank. If it gets shy, add a small school of 5-6 deep bodied tetras for dithers. You may need a bottom cleaning crew, which is were you have a few options. Because the rotkeil will take up a fair amount of the available max bioload space, I personally would add a small shoal of 6 Cory catfish. They are a fun little fish to watch. You could also do 2 small catfish that stay under 4" or one catfish that stays under 6". Or you could go the pleco route. Get just one pleco and tank is done. For any of these bottom dwellers (except the pleco) it might be best to try and get a rotkeil that is 2-3" and grow it out. With a small rotkeil, the tank would only need 2 weekly water changes of 30-50%.

I have never owned a salvini, but I have read a lot about them. The biggest reason people seem to get them is because they see their brilliant coloration in a picture online. Unfortunately, that brilliant coloration is their breeding dress colors, so they will not show them unless you get a pair to breed. They are not very good wet pets like severums are. Severums will recognize their owners and come to the front of the tank to greet you and beg for food whenever you are near. I have two super red severums that are only 3" each and they both do this anytime I pass by the tank. Salvini are more frequent to being murderous monsters than severums are. Just some food for thought.

The 55 is big enough for a pair of salvinis. The thing with sals is that they're very shy and hide a lot. If you're planning to keep this fish I suggest keeping a pair to make them more comfortable. Dithers would also help but a 55 wouldn't be big enough and the sals would just kill ur dithers.

You have options but expect to add more filtration with anything past a single fish.
