I'll second the anubius, especially nana and barteri. If you tie them to driftwood with some fishing line the roots will grow into it, then you can easily remove it to clean or shift it around in the tank or between tanks.
I've got anubias, java fern and water sprite in my tanks. They're all doing great without Co2, special lighting or fertilizers (besides the natural fertilizers my fish produce).

Anacharis all the way, I call it old faithful. Very easy to care for, and you can either plant it or let it free float in the tank. It will thrive either way.
