Are two FX5s overkill for a 125?

I would do it. I will be running an fx5 and 3 ac110's on my 125 when it all arrives thanks to tax returns with the fx5 it allows you to load it with bio material.

Thinking of two FX5's even before you have hooked up one is definately overkill. A bigger tank could be better tham more filtration in your situation especially if your fish are going to need a larger home.
One line of thought that lends weight to the bigger is better idea is that with more water comes more buffering from water changes. A 180g with an FX5 and 2 ac110s should keep your parameters in check especially with your water changing regime.

2 Fx5s
- Over 10 liters of bio media
- 1200 GPH
- 9.6 cycles per hour
- Mechanical Filtration Quality= 9
- Bio filtration quality = 10
- 105 watts

Fx5 + 2 AC110
- 7 Liters of bio media
- 1600 GPH
- 12.8 Cycles per hour
- Mechanical Filtration Quality = 6
- Biofiltration = 6
- 81 watts
 
I do want to stress that more filters do not mean less water changes!
