I want to know how other MFK coax their knife fish out into their aquariums becuase my RCK is very shy and only comes out at night.
I actually haven't seen him eat and I am worried my large plecos are eating most of his food.

mines not "shy" but they are a nockternal fish, so its normal for them to hide during the day, i hand feed mine tilaphia fillets whiles hes in his cave to make shure he gets food.

The current Knife I have (RCK) is the shiest Knife I've ever had. I had one before, but it was pretty beat up from the Cichlids I used to have. I don't remember it's behavior very well. Regular CKs that I've had were only shy when there were small...under 8"

I just worry about him but I will try to coax it to hand feed over time.

I had 3 clown knifes I bought few years back, they were 2 inch long when i got them, bought all 3 of them cause they're really rare where i live! mine weren't too shy, they lived in a 20 gallon at that time and when they felt my foot steps, they knew it was feeding time. Maybe cause i fed them quite a bit of live food!

Here's the log my RCK hides in.
He does come out at night and may be is just getting use to his surroundings. I only hope that he is getting some of the food I put out each night.

How long have you had him? What other kinds of fish are in the tank? I've been pretty lucky so far with mine coming out, but it took some time for him to get use to the tank. Lots of plants/lots of cover so he/she can easily hid from place to place helps, and makes them feel more secure. With mine sized mattered too - once he was bigger than the other fish, he was a lot more willing to come out.
My experience with these guys has been when their hungry, they'll let you know.

it takes time for them to adapt.

Feed them at night, when it is absolutely dark. It'll eat, then.

I've had the fish under 6 weeks and it's about 6 inches long. I have it in a 180g tank with my Saratoga, Petenia and 3 large Plecos. He is the smallest fish in the tank and may be just acclimatising. It's just the feeding thing that worries me, I know the fish does come out at night looking for food but with the plecos anything on the bottom is there's also.
