I don't think thats a good idea. IME higher tank/water level makes a fish less skittish. Lowering water would help lessen the damage from jumping up and hitting it's head but this isn't your case. Your Jar seems to be swimming rapidly back and forth. Just give it some time to adapt. Try dropping the food and back away. Let it take the food.lower the water.
