probaly the most commonly kept Aussia native here would ne the two saratoga species
Jardini/leichardti.
Murray cod and jungle perch(jungle perch) are also commonly available.
Barramundis are also common, small one sell for about $5 to $10. Or go to those Asian fishmarkets and buy live ones 12-15 inch for $20.
Gadopsis (river balackfish) and macquarie perch I have never seen for sale. In fact, Macquarie perch is listed as endangered, banned from being kept if caught in one state, and very tight bag limit in the other state they are found in.
Scats are very commonly available cheaply.
Australin lungfish are very rarely seen. Totally protected over here, you cannot specifically target them when fishing, and you need special permits to keep them. Not actually able to be sold in lfs.
Bullrouts? Go out and catch some in the local estuaries! Not commonly seen because of their camouflage, but very common. I get at least 1 or 2 every time I net for shrimp for my fish. Step on one once when fishing, foot swelled up for bloody days
