If you wanna try frozen, try some raw crawfish meat from the grocery store. It's pricey, but not pricier than regular frozen fish food. He will likely recognize the smell and taste.
My adult shadowbass only would eat crawdads and worms. Wouldn't touch anything dead. I dropped in some frozen crawfish meat and he went right for that.
I also tore up some pieces for my little fish and my mottled sculpins went right for it and fought over it. One of them ate a piece the size of his head, and the darters picked some up too. If my darters and sculpin will go for it, yours likely will too.
All of my natives including the darters also do frozen glassworms, so you can try to start him on that. Though it gets expensive to feed to anything of substantial size in the long run. I have to feed the small fish in my 90g 4 blocks of it a day, + torn up frozen shrimp or crawfish. Then again I have a bunch of minnows, darters, baby sculpin, 2 madtoms, 2 adult logperch, and several juvie shadowbass .
