But those only monitor one tank each right? So have the for heat mats hooked to it and if the one gets to hot, then they all would be hot and turns them all off right.

If all heat mats (I suggest flexwatt heat tape for multiple enclosures) are the same wattage, all of them should be the same temp. You only need one thermostat unless you exceed the thermostat's wattage capacity.
