Begginer intermediated looking for help on 30 gallon set up

Hello Every one. I'm new here so I would like to start of by introducing my self and saying hi.

I have a 30 gallon tank set up right now. Back at Christmas time I was breeding apistogramma cacatuoides in it. I had to sell off my colony because I get sent out of town some times.

So Iv been starring at this tank for months and it just hasn't spoken to me. A third of the tank is filled with overgrown tiawan and spiky moss, 4 large anubius. I have tons of other decor I can put in including fake plants, coconut caves. Since the Apistos have been gone iv just had a group of 5 ottos.

I'm looking for advice on how to scape this un organized heap of vegetation into somthing beautiful.

I'm also looking for stocking suggestions.
Easy easy. Nothing hard to feed

Iv been thinking of doing a species only tank

Maybe a betta

Maybe a heard of cory cats

Maybe one electric blur acara.

Maybe a heard of endlers.

A kribensis

Sparkling gourami.

Easy of care for times when I'm out of town for up to 5 days is key. Any interesting suggestions I have not thought of would be appreciated

As for stocking, are you more interested in a colony/group setup or more of a solo/paired wet pet?
 
I could go either way. I don't want to deal with aggression. When I had Apistos the where Breeding and I had to separate the male because he snacked on the kids. I was hatching bbs all the time. It was too much work. I have that hudge pile of moss in the center of the tank. I'd like to scape it some how so it looks appealing and put somthing in that might appreciate it. Last night I was thinking one electric blue acara and a small group of sterbai Cory's (8). I am concerned that 30 gallons is to small for an Acara I know they love to swim. Two days ago I was convinced endlers where the way to go. I'd rather a species only colony or a single / pair of somthing unique. I already have a community tank.
 
I tried killi fish once but they where really picky eaters
 
What to do with the moss to. Wrap it around some rocks and drift wood?
 
I don't think there's any way really to keep moss like that tidy, at least not for long. I kinda hate it, it wiped out my tank once.

What do you mean it wiped out your tank? Killed all your fish?
