Beginner--Molly breathing hard

I did a larger water change today about 50% and added some of that bacteria starter. Ammonia is down to a little over .25ppm. I won't be there to do any more water changes until Monday. My remaining fish are doing great and I haven't noticed any problems with the fry.

I've also read that there are three cycles that the tank goes through, ammonia, nitrate, and nitrite. Is that true? Will I have to battle those separately as well?
 
to have a fully cycled tank they run the three in sequence, first is the ammonia followed by nitrite then finished with nitrate. The last is the one where you know your tank is cycled, the first two are the deadly ones but the two over lap usually only takes about a month or sometimes less pending on how the cycle is done and size of the tank ect..

Yes you need to do water changes to keep the nitrite down. I believe I have said that now three times.
