My red devil is crazy. He attacks the algie magnet. The Oscars I got are not as crazy as the red devil. But the Oscar's are crazy to watch eat. Alot of personality in both types of fish.

An oscar would be a great choice, they grow fast and have great personality. Mine would bump the glass lids when I was near the tank begging for food.

what about a wolf fish. or a gulper cat?

redfin pickerel aquarium could do a couple in a tank that size. no need for a heater and its not a fish that everyone and there mothers have.

Fahaka puffer fish, always fascinating and impresses everyone.

Failing that, like previously mentioned, jaguar cichlid. Big angry brute that attacks the glass.

Another vote for fahaka. It has personality, likes to watch you, gets ~18" so pretty much largest fish that is ok in a 120. And it's a straight up murder machine capable of biting fish larger than it clean in half.

Downside is expensive to feed and can be tricky finding appropriate food that it will eat.

A fahaka will take a little more dedication... Going to need to scape the whole tank, lots of frozen seafood, keep water really clean, de-worming etc..

Not to mention, a 120 really is the absolute bare minimum, a 180 would be better...
