Nuchal humps are mostly based on the genetic make up of the fish, not diet.
It will probably not get much larger than it currently is. Attempting to pump it up with high protein foods will simply create the potential for gastrointestinal issues, and shorten its lifespan. I fed my FH the same pellets that I fed my omnivorous CA cichlids - because after all that's what their genetic make up is based on.
The hump in all cichlids, is a water filled sack often temporarily based on alpha status in a group, so genetics is a very important basic factor. If the genes are there to make the sack large, it will be large, if not, thats the profile you get.
It is interesting that in lab experiments, females often don't choose the male with the biggest hump, out of a group, so that is probably not the only determining factor.

One factor you can definitely control is water quality. Noticing darker fins tells me your water temp may be on the low end. I prefer 86 F to induce a healthy appetite.
