best live food for the winter?

Check with a local bait shop - see if you can get some nightcrawlers from them. They may also have crickets and various types of grubs like waxworms, etc. Not to mention minnows (fathead minnows are the same as rosie reds, just different color genes), grass shrimp, etc. You can also start your own worm bed growing, etc.

or a goose

I would just feed different types of worms and try to switch him to pellets or frozen fish

Go to the bait shop, they got more than enough food stuffs. Crayfish, leeches, waxworms,
"mousies", fish, earthworms. Fish should be QTed, the other stuff SHOULD be fine but you may want to QT any aquatic life. You could also get crickets and such at the LFS or try frozen. I have had lots of fish turn down pellets and such but even the bass I have kept would take frozen foods.

i would try and get it one pellets, the fish would eat pellets before it starves get some sinking ones and put like drop of that fish sent stuff. maybe that would help get him to eat it

My LMB takes pellets, just throw them at the surface. Usually an aggressive fish like that will hit any moving object.
