Best SMALL Bichir???

That is too many big fish for that size of tank. The knife and JD will get too big for that tank just by themselves.
Yeah, take out the knife and all the cichlids and you are still overstocked with 3 bichirs. I say just go with a species only tank.
 
I was planning on moving the ghost knife, a couple geos, and two of the bichirs when they got bigger...

Would it still be overstocked with 1 bichir, 1 Dempsey, and 1 geo in 1-2 years???

I would leave out the Geo and go with a JD and 1 bichir, Geo's do better in groups and if you only have 1 Geo with your JD, I'm almost positive the JD will harass or attack the Geo until it dies. Your bichir will most likely be fine because cichlid aggression is usually only reserved for other cichlids, though it will depend on the individual fish itself.
 
I have a 60g and getting 3 x 1-2" senegal bichirs, a 2" bg knife, and maybe a jack dempsey.

What kind of fish would i be able to keep a little school (4) of with my bichirs?
 
My experience says it´s ok to keep the Geo with the Dempsey, mine just leave the Geos alone, but perhaps thats because I keep more than just one Dempsey.
Keeping a school of smaller fish is quite risky because the Polypterus will eat them if they get the chance (night time is the right time...).

I've got 6 gouramis with my grown (8") sen and it works out. Someone said on an earlier post that schooling fish like tetras/ barbs that make fast/jerky movements are prime targets for bichirs. IME, I'd have to agree.
 
I Thought i used to really ENJOY looking at my fish UNTIL I got a Sen, and now i LOVE IT!!! That little bugger has me mesmerized for what seems like HOURS sometimes... I cannot speak about delhezi's yet, but Sens, are AWESOME fish!!! They may not have the most color, but if you look through your LFS stock, you can usually find one that looks more unique than the others. Who knows, maybe, you'll end up with a platinum! They remind me of what a dragon must look like flying through the air.
