Best snail for an African tank?

I would never put apple snails with africans, their antennae are way to visible. Not only that, they are cruddy algae eaters. Assassins would do nothing for algae.

Your best bet would be a nerite. I would start with an olive nerite as they are the cheapest. These do not reproduce in freshwater, have very tough shells, not very visible faces or antennae, and are exceptional algae eaters.

My AC's love snails about as much as my Loaches.

Apples - No
Rams - No
Trapdoors - Nope

Haven't tried MTS, but thinking they don't stand a chance either.

BN Plecos are a hardy plec that don't get big and are pretty good grazers.

This is interesting. I guess I have to mention that the Africans that I have two Apple snail in with are less aggressive that most. I've kept a pretty close eye on them since putting them in the tank and I have never once seen them even show interest in the snails.

Good info to know. I'll definitely keep a watch on them.

issue too is that apple snails have pretty thin shells. They get knocked about and can have shell fractures pretty easily. I don't keep any africans, so cannot attest to their behavior, but in general I recommend apple snails only wth docile tank mates.
