Big enough yet to hang with a jag???

I think you should get the Female jag a 90-120 gallon tank with the pleco well only if it is a common pleco or something that is about as big as a common pleco. You should give the Texas a 70 gallon. You should get a 180-240 gallon tank for the pacu. What do you mean by to "cats" what kind of catfish?
 
If you got the red texas from petsmart its most likely a low - mid grade flowerhorn. If it is in fact a (not kamfa) flowerhorn in should catch up to the jaguar eventually. I've also seen Kamfa type flowerhorns but those grow around the same speed as viejas, so really slow growing. IT could also be a zz type FH and be very fast growing.

I'm gonna try putting h in there now because he's staring to go after the smaller cichlids in the grow out and looks to be to big to fit in the jags mouth but I'll have to watch the tank pretty closely tonight and see what happens

I don't think female jags get all that big, I've had one for just over two years now and its about 7" and nice and fat, its alone in a 55 though cause it doesnt like tank mates, but she is happy and doesn't seem to be getting any bigger, not like the males that get up to 16". But If the tank is heavily planted you have a chance, also redecorate so the jag doesn't have too much of an upper hand, it'll give the guy a shot and may be successful.
