Big exotic pond fish that can handle semi-cold winters?

My dad owns a ranch out near Granbury with a 25 foot deep pond. It is big, probably around the size of a small lake. It's really deep though. I don't know the water temp in the winter but I know the air temp gets surprisingly cold some times. I want to put some exotic pond fish in it. Keep in mind, it is a fishing pond so they need to be hardy. We would catch them for sport. I want it to be like one of those fishing ponds in Malaysia, although that probably won't happen since most of those fish can't survive the winter here (I think?) I would like some suggestions on exotic fish that can survive cold water temps but get huge, like really big. I have always wanted to have a fish that has the potential to get really big, because that would be a fun fight! Is there any exotic catfish that could survive? Like a red tail catfish or something that gets just as big if not bigger? Suggestions would be appreciated!!

Gars, Sturgeon, Paddlefish, bowfins, Chinese tiger fish, goonch catfish, mashers. I believe all these fish can handle colder water. Not to mention they are bad ass and beautiful

If you can keep the temp above 45 f: redfish,bowfin, maybe Korean perch, meanmouth bass, blue catfish, alligator gar, longnose gar,hybrid striped bass,chain pickerel,

As forage base: large bluegill, tilapia (stock yearly), yellow perch,missippi grass shrimp.

Plants: native water lilies,iris (on edges), water arum(edges), hornwort,

(Plants help insure a healthier forage base).
