How long do you think it will take for the bio in my sump to start to seed onto the new media in my canister filter?

Couple of weeks is the usual answer.
Could be true, or not.
Really depends on the amount of food/oxygen going through the media.
There is always a bunch of free floating bacteria in the entire system.
If the can provides a good home, it will set up shop.
The bacteria reproduce at such a large rate that a small amount can grow in quite a short time.
