....but seriously. How about a large interesting driftwood centre piece in the middle of the tank, with some java fern and small anubias or similar attached to it?

no plants, the oscar will destroy trhem, for the knife you could get a clear plastic tube for him to go hide in and you could still see him. add a background and maybe a few bigger rocks

I have some plastic plants in small plastc flowerpots that way when oscar drags them around it doesnt disrupt anything

Not in the middle, on 1/3 length of the tank. It just looks better.
